2 large sweet potatoes (yams), peeled, cut into ½-inch thick lengthwise batons

2 Tbsp. extra-virgin olive oil

1 Tbsp. curry powder, Himalayan salt (or sea salt); to taste, optional


1. Heat oven to 400° F.

2. Peel and cut sweet potatoes into about ½-inch thick fries.

3. Toss sweet potatoes with oil to coat.

4. Spread potatoes in a single layer on a baking sheet.

5. Sprinkle with curry powder (and salt, if desired).

6. Bake for 20 to 30 minutes (turning once) until tender.

7. Let cool for about 5 minutes before serving.
