Pizza Zucchini Boats

Pizza Zucchini BoatsIngredients:

  • 1 medium/large zucchini
  • 4 Tbsp. pizza sauce (I used Muir Glen Organics)
  • Toppings of choice (I used zucchini pulp, mushrooms, red peppers, and onion)
  • Cheese (dairy or non-dairy, if desired)
  • Oil (Coconut or extra virgin olive oil)

Directions:

Preheat oven to 350°.  Lightly oil a baking dish (I rubbed a little coconut oil on the bottom of dish).  Wash and cut off ends of zucchini, then cut the zucchini in half (lengthwise).  Scoop out the pulp so that you have enough room to add your toppings, but save pulp to mix with topping mixture.  Chop up pulp and chosen vegetables.  Add a little oil to pan and heat, then  add veggies and sauté.  While prepping veggies, place the zucchini boats in a baking dish and place in the oven and bake for 15 minutes.  Remove and pile on chosen toppings (and cheese, if desired).  Place loaded boats back in the oven and bake for an additional 15 minutes (or until zucchini is tender).  Remove and let cool slightly.  Enjoy!
